Laksa – delicious coconut curry

Til 4 personer trenger du:

  • 2 ss rød curry paste
  • 2 bokser kokosmelk
  • 500 ml kyllingkraft
  • 1 ss fiskesaus
  • 2 ss brunt sukker
  • Saften fra en lime
  • 1 gul squash i kuber
  • 200 gram risnudler ferdig tilberedt (se oppskrift på pakken)
  • 300 gram Frøya back loin som skjæres i store terninger
  • 10 stk scampi

Til servering:

  • 1 pakke sukkererter
  • Koriander
  • Vårløk
  • Lime
  • Tørket kokosnøtt i skiver

Directions:

  1. Stir the curry into the coconut milk. Add the chicken stock and fish sauce, brown sugar and lime. Bring to a boil.
  2. Prepare the rice noodles according to the instructions on the package.
  3. Add the squash and bring to a rapid boil.
  4. Cut the salmon into suitably large cubes.
  5. Add the salmon and prawns to the sauce, remove from heat and simmer. Remember the fish should be pink in the centre.
  6. Place the rice noodles into the bowls. Pour the soup over the noodles.
  7. Garnish with coriander, chopped spring onions and sliced sugar snap peas. Serve with sliced lime.
